This easy-to-make treat is perfect for gatherings and can be prepared ahead of time by chilling in the refrigerator to set.
Ingredients
Scale
Crust
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Cheesecake Filling
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup heavy whipping cream
- 1/2 cup sour cream
Topping
- 1 can (21 oz) cherry pie filling
Instructions
- Prepare the Crust: In a medium-sized bowl, combine the graham cracker crumbs and granulated sugar. Stir in the melted butter until the mixture is well combined and resembles wet sand. Press the mixture into the bottom of a 9×13-inch baking dish or pan to form an even layer. Set aside.
- Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Add the vanilla extract, heavy whipping cream, and sour cream. Beat until well combined and the mixture is fluffy.
- Assemble the Dessert: Spread the cheesecake filling over the prepared graham cracker crust, smoothing it into an even layer with a spatula.
- Chill: Refrigerate for at least 2 hours (or overnight) to allow the layers to set and firm up.
- Add the Cherry Topping: Once the cheesecake layer is set, spoon the cherry pie filling evenly over the top of the cheesecake layer.
- Serve: Cut into squares and serve chilled. For an extra touch, you can garnish with whipped cream or a sprinkle of graham cracker crumbs before serving.
Notes
- For best results, chill overnight to allow the layers to fully set.
- You can substitute cherry pie filling with other fruit pie fillings as desired.
- Make sure the cream cheese is softened to avoid lumps in the filling.
- Use a spatula to evenly spread the layers for a smooth finish.
- Store leftovers covered in the refrigerator for up to 3 days.
