Description

A comforting Chicken & Stuffing Casserole featuring tender seasoned chicken breasts layered with moist stuffing mix, creamy chicken soup, and optional cheddar cheese. Baked to golden perfection, this hearty one-dish meal is perfect for an easy family dinner.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (or thighs for extra flavor)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Stuffing Mixture

  • 1 box (6 oz) stuffing mix (or homemade stuffing, if preferred)
  • 1 cup chicken broth
  • 1/2 cup sour cream (optional for creamier texture)

Other Ingredients

  • 1 can (10.5 oz) cream of chicken soup (or mushroom soup for a twist)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 tablespoon butter (for greasing the casserole dish)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Chicken: Preheat your oven to 350°F (175°C). Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Optionally, pan-sear the chicken for 2-3 minutes per side over medium heat to develop a golden color and enhance flavor.
  2. Mix the Stuffing: In a large bowl, combine the stuffing mix with the chicken broth and sour cream, stirring until the stuffing is well moistened. Set this mixture aside.
  3. Prepare the Casserole Dish: Grease a 9×13-inch casserole dish with butter or non-stick spray to prevent sticking.
  4. Assemble the Casserole: Arrange the seasoned chicken breasts in the bottom of the casserole dish. Evenly spread the stuffing mixture over the chicken. Then, pour the cream of chicken soup over the stuffing, spreading it out uniformly. If desired, sprinkle shredded cheddar cheese on top to add a cheesy layer.
  5. Bake Covered: Cover the casserole tightly with aluminum foil and bake for 25-30 minutes to allow the chicken to cook through and the stuffing to steam.
  6. Bake Uncovered: Remove the foil and continue baking for an additional 10-15 minutes until the chicken reaches an internal temperature of 165°F and the stuffing is golden brown on top.
  7. Garnish and Serve: Garnish the finished casserole with fresh parsley if desired, and serve hot. This dish pairs well with roasted vegetables or a crisp side salad.

Notes

  • Optional pan-searing adds flavor but can be skipped for a simpler preparation.
  • Sour cream in the stuffing mixture enhances creaminess but can be omitted for a lighter version.
  • Switch cream of chicken soup with mushroom soup for a different flavor twist.
  • Use chicken thighs instead of breasts for extra flavor and juiciness.
  • Ensure chicken is cooked to a safe internal temperature of 165°F using a meat thermometer.
  • Leftovers can be refrigerated for up to 3 days and reheated thoroughly before serving.
