Description

Delight in the rich and fudgy Chocolate-Covered Strawberry Brownies, combining classic cocoa brownies topped with fresh strawberries and a luscious chocolate ganache. This irresistible dessert blends the perfect balance of sweet, fruity, and chocolatey flavors, ideal for any occasion or a special treat.

Ingredients

Scale

Brownies

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Topping

  • 1 1/2 cups fresh strawberries, sliced
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper to ensure easy removal of the brownies.
  2. Mix Brownie Batter: In a medium bowl, whisk together the melted butter and granulated sugar until smooth. Add the eggs and vanilla extract, whisking until fully combined. Gently stir in the cocoa powder, all-purpose flour, salt, and baking powder just until incorporated to avoid overmixing.
  3. Bake Brownies: Pour the brownie batter evenly into the prepared pan. Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from oven and allow to cool completely.
  4. Add Strawberries: Once the brownies have cooled, arrange the sliced fresh strawberries evenly over the surface, distributing them to cover the entire top.
  5. Prepare Chocolate Ganache: In a small saucepan, heat the heavy cream just until it begins to simmer. Pour the hot cream over the chocolate chips placed in a heatproof bowl. Let it sit for 2 minutes to melt the chocolate, then stir gently until the ganache is smooth and glossy.
  6. Top Brownies with Ganache: Pour the chocolate ganache over the strawberries on the brownies. Use a spatula to gently spread it to cover the fruit and the top evenly.
  7. Chill and Set: Refrigerate the assembled brownies for at least 1 hour to allow the ganache to set firmly. Once set, slice into 9 squares for serving.

Notes

  • Use ripe but firm strawberries for best texture and appearance.
  • For cleaner slices, wipe the knife between each cut to prevent sticking.
  • Store brownies covered in the refrigerator for up to 3 days to maintain freshness.
