Description

These Cottage Cheese Chaffles are a delicious and low-carb alternative to traditional waffles, combining cottage cheese, cream cheese, almond and coconut flours for a fluffy, protein-packed breakfast or snack. Perfectly golden and lightly sweetened, these chaffles are easy to prepare using a waffle iron and are ideal for those following a low-carb or keto lifestyle.

Ingredients

Scale

Wet Ingredients

  • 6 eggs
  • 1 cup cottage cheese (2% or 4% milk fat)
  • 4 oz softened cream cheese
  • 2 teaspoons vanilla essence

Dry Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/3 cup sweetener mix (or alternative in notes)
  • 1 teaspoon baking powder

Instructions

  1. Preheat the waffle iron: Follow your manufacturer’s instructions to preheat your waffle iron so it is ready for cooking the chaffles.
  2. Blend ingredients: Combine all ingredients in a blender and blend until smooth, making sure to scrape down the sides to incorporate everything evenly.
  3. Prepare the waffle iron: Lightly grease your waffle iron using oil or cooking spray to prevent sticking.
  4. Cook the chaffles: Pour about 3/4 cup of batter onto the preheated waffle iron (adjust quantity if your iron is smaller) and cook until golden brown. Note that the ready light on your iron may turn on before the chaffle is fully done, so check the color carefully.
  5. Repeat: Carefully remove the cooked chaffle and repeat the process for the remaining batter, greasing the waffle iron between batches as needed.

Notes

  • You can substitute the sweetener mix with alternatives like erythritol, stevia, or monk fruit sweetener for a keto-friendly option.
  • To get crispier chaffles, leave them in the waffle iron a bit longer, but be careful not to burn them.
  • These chaffles can be enjoyed with savory toppings or sweet ones like sugar-free syrup and fresh berries.
  • Store leftovers in the refrigerator and reheat in a toaster or waffle iron for best texture.
