Ingredients
Scale
Chicken Mixture
- 1 (8-oz) package cream cheese, softened
- 1½ cups chopped cooked chicken
- 1½ cups shredded cheddar cheese
- 1 Tbsp taco seasoning
- 6 Tbsp salsa
- ¾ cup corn kernels
- ¾ cup black beans, drained and rinsed
Wraps
- 4 or 5 large burrito tortillas (10-inch)
Instructions
- Prepare the mixture: In a large bowl, thoroughly mix the softened cream cheese with chopped cooked chicken, shredded cheddar cheese, taco seasoning, salsa, corn kernels, and rinsed black beans until well combined.
- Spread the filling: Evenly spread about ¼ to ⅓ cup of the chicken mixture onto each tortilla, distributing it to cover the surface without overfilling.
- Roll the tortillas: Carefully roll each tortilla up gently but tightly to ensure the filling stays inside and the roll maintains its shape.
- Chill and slice: Refrigerate the rolled tortillas for about 30 minutes to allow the cream cheese to firm up, making slicing easier. After chilling, trim the ends of each roll and cut into 1-inch slices to create the pinwheels.
Notes
- Use fully cooked chicken to save time; leftover rotisserie chicken works great.
- For a spicier version, add diced jalapeños or use a spicy salsa.
- The tortillas need to be soft and fresh to roll without cracking.
- These pinwheels are best served chilled but can be left at room temperature for up to 2 hours for parties.
- Store leftovers tightly wrapped in the refrigerator and consume within 2 days.
