- 1 lb medium to large raw shrimp, peeled and deveined
- 2 eggs
Vegetables
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tsp minced ginger
- 1 cup frozen peas and carrots
- 3 tbsp chopped green onions
Rice and Oils
- 3 cups cooked white or brown rice
- 2 tsp sesame oil, divided
Sauces
- 3 tbsp soy sauce
- 3 tbsp oyster sauce
Instructions
- Cook Shrimp: Heat 1 teaspoon of sesame oil in a large wok or skillet over medium heat. Add the shrimp and cook for 2–3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set them aside.
- Scramble Eggs: In the same wok, add the eggs and scramble until just set. Remove the cooked eggs and set aside with the shrimp.
- Sauté Onion: Add the diced onion to the wok and cook for 3–5 minutes until softened. Remove and set aside.
- Sauté Aromatics: Add the remaining teaspoon of sesame oil to the wok. Sauté the minced garlic and ginger for about 30 seconds until fragrant, taking care not to burn them.
- Cook Vegetables: Stir in the frozen peas and carrots and cook for approximately 2 minutes until heated through and tender.
- Add Rice: Add the cooked rice to the wok and stir well to combine evenly with the vegetables and aromatics.
- Season Rice: Pour in the soy sauce and oyster sauce, stirring thoroughly to coat the rice evenly and heat through.
- Combine Ingredients: Return the cooked shrimp, scrambled eggs, and sautéed onions to the wok. Stir in the chopped green onions and heat everything together until hot and ready to serve.

- Use leftover day-old rice for best texture to prevent the fried rice from becoming mushy.
- You can substitute shrimp with chicken, tofu, or other proteins as preferred.
