Instructions
- Sieve the Icing Sugar: Begin by sieving the icing sugar to remove any lumps, ensuring a smooth base for your peppermint cream mixture.
- Add Lemon Juice: Slowly add the lemon juice a little at a time while stirring continuously until the mixture becomes crumbly but not sticky.
- Add Peppermint Extract: Introduce the peppermint extract and mix thoroughly to combine the flavors evenly.
- Knead the Mixture: Using your hands, knead the mixture until it smooths out and forms a cohesive ball. If too crumbly, add a little more lemon juice cautiously; if too sticky, add more icing sugar to balance the texture.
- Roll Out the Dough: Lightly dust your work surface and rolling pin with icing sugar, then roll out the dough evenly until about 5mm thick.
- Cut into Shapes: Use festive cookie cutters such as hearts, snowflakes, and stars to cut the dough into shapes.
- Dry the Peppermint Creams: Place the cut shapes on baking parchment and allow them to dry at room temperature for at least 30 minutes until firm.
- Optional Decoration: Melt the dark chocolate and either dip or drizzle it over the peppermint creams. Add edible glitter, icing shapes, or golden sugar for extra festivity.
