Description

Delight in these fluffy, tropical mango pancakes that combine sweet diced mango with a classic pancake batter. Perfect for a sunny breakfast or brunch, these pancakes are light, flavorful, and served warm with optional powdered sugar or maple syrup for a sweet finish.

Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 large egg
  • 3/4 cup milk
  • 1 tablespoon melted butter or oil
  • 1/2 teaspoon vanilla extract

Additional Ingredients

  • 1 cup ripe mango, diced small
  • Additional butter or oil for cooking
  • Optional powdered sugar or maple syrup for serving

Instructions

  1. Prepare the dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. Mix the wet ingredients: In a separate bowl, beat the egg, then whisk in the milk, melted butter or oil, and vanilla extract thoroughly.
  3. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir gently just until combined, taking care not to overmix to keep the pancakes fluffy.
  4. Fold in mango: Carefully fold the diced mango pieces into the batter, distributing them evenly without breaking them down.
  5. Preheat and grease skillet: Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil to prevent sticking.
  6. Cook the pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2 to 3 minutes until bubbles form on the surface and edges look set.
  7. Flip and finish cooking: Flip each pancake carefully and cook for an additional 2 minutes until golden brown and cooked through.
  8. Repeat and serve: Continue cooking the remaining batter, greasing the skillet as needed. Serve the pancakes warm with optional powdered sugar or maple syrup for added sweetness.

Notes

  • For best texture, use ripe but firm mango to avoid overly mushy pancakes.
  • For an extra mango boost, blend a few mango pieces into the milk before mixing with other wet ingredients.
  • These pancakes pair wonderfully with whipped cream or coconut syrup as toppings.
