Ingredients
Scale
Dry Ingredients
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Wet Ingredients
- 1 large egg
- 3/4 cup milk
- 1 tablespoon melted butter or oil
- 1/2 teaspoon vanilla extract
Additional Ingredients
- 1 cup ripe mango, diced small
- Additional butter or oil for cooking
- Optional powdered sugar or maple syrup for serving
Instructions
- Prepare the dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Mix the wet ingredients: In a separate bowl, beat the egg, then whisk in the milk, melted butter or oil, and vanilla extract thoroughly.
- Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir gently just until combined, taking care not to overmix to keep the pancakes fluffy.
- Fold in mango: Carefully fold the diced mango pieces into the batter, distributing them evenly without breaking them down.
- Preheat and grease skillet: Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil to prevent sticking.
- Cook the pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2 to 3 minutes until bubbles form on the surface and edges look set.
- Flip and finish cooking: Flip each pancake carefully and cook for an additional 2 minutes until golden brown and cooked through.
- Repeat and serve: Continue cooking the remaining batter, greasing the skillet as needed. Serve the pancakes warm with optional powdered sugar or maple syrup for added sweetness.
Notes
- For best texture, use ripe but firm mango to avoid overly mushy pancakes.
- For an extra mango boost, blend a few mango pieces into the milk before mixing with other wet ingredients.
- These pancakes pair wonderfully with whipped cream or coconut syrup as toppings.
