Description

These Mediterranean Quesadillas are a quick and flavorful meal packed with fresh spinach, tangy feta, melty mozzarella, and sweet red onion, all wrapped in warm flour tortillas and lightly pan-fried to golden perfection. Perfect for a light lunch or easy dinner, they combine Mediterranean flavors with a classic quesadilla twist.

Ingredients

Scale

Filling

  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 teaspoon black pepper

Other

  • 4 flour tortillas
  • 1 tablespoon olive oil (for frying)

Instructions

  1. Prepare the Filling: In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Stir thoroughly until all ingredients are evenly mixed.
  2. Assemble the Quesadillas: Lay one flour tortilla flat on a clean surface. Spoon about one-fourth of the filling mixture onto half of the tortilla, spreading it evenly.
  3. Fold the Tortilla: Carefully fold the tortilla over the filling to create a half-moon shape, sealing in the mixture.
  4. Heat the Skillet: Place a large skillet or griddle over medium heat and add the olive oil. Allow the oil to heat up until shimmering but not smoking.
  5. Cook the Quesadillas: Place the filled tortilla in the skillet. Cook for 3-4 minutes on each side, pressing gently with a spatula to ensure the cheese melts evenly and the tortilla turns golden brown and crisp.
  6. Serve: Remove the quesadilla from the skillet and let it cool slightly. Slice into wedges and serve warm.

Notes

  • You can substitute whole wheat tortillas for a healthier option.
  • To add more flavor, sprinkle some dried oregano or crushed red pepper flakes into the filling.
  • Use a non-stick skillet to reduce the amount of olive oil needed.
  • Leftover quesadillas can be reheated in a skillet or oven to maintain crispiness.
