Description

These Sausage and Egg Breakfast Pizzas offer a delicious and hearty way to start your day. Featuring a pre-made pizza crust topped with savory breakfast sausage, fluffy scrambled eggs, and a melty blend of cheddar and mozzarella cheeses, this quick and easy recipe is perfect for breakfast or brunch. Garnished with green onions and an optional hint of red pepper flakes for a little kick, these pizzas deliver a satisfying combination of flavors and textures in just 25 minutes.

Ingredients

Scale

Pizza Base

  • 1 pre-made pizza crust (or homemade dough)
  • 1 tablespoon olive oil

Filling

  • 1/2 lb breakfast sausage, crumbled
  • 4 large eggs, beaten
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper, to taste

Garnish (Optional)

  • 1/4 cup green onions, chopped
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Preheat Oven: Preheat your oven according to the pizza crust package instructions or to 425°F if using homemade dough to ensure a crispy crust and melted cheese.
  2. Cook Sausage: Heat olive oil in a medium skillet over medium heat. Add the crumbled breakfast sausage and cook until browned and fully cooked through, about 5-7 minutes. Drain any excess fat and set aside.
  3. Scramble Eggs: Using the same skillet, pour in the beaten eggs. Cook while stirring frequently until eggs are fully scrambled and cooked through. Season with salt and pepper to taste. Remove from heat and set aside.
  4. Prepare Pizza Crust: Place the pizza crust on a baking sheet and lightly brush the surface with olive oil to help crisp the crust during baking.
  5. Assemble Pizza: Evenly spread the cooked sausage over the pizza crust, followed by the scrambled eggs. Then sprinkle both cheddar and mozzarella cheeses evenly over the top.
  6. Bake: Transfer the assembled pizza to the preheated oven and bake for 8-10 minutes or until the crust turns golden brown and the cheese melts and bubbles.
  7. Garnish & Serve: Remove from oven and sprinkle with chopped green onions and crushed red pepper flakes if desired. Slice the pizza and serve immediately for a warm, comforting breakfast.

Notes

  • You can substitute the breakfast sausage with turkey sausage for a leaner option.
  • If you prefer a spicier pizza, increase the crushed red pepper flakes to taste.
  • To make the crust extra crispy, pre-bake it for 3-4 minutes before adding toppings.
  • Leftover pizza can be refrigerated and reheated in the oven to retain crispness.
