Description

Sweet Harmony Honey Glazed Corn Casserole is a comforting and delicious dish combining whole kernel corn, cream-style corn, and a sweet honey glaze, baked to golden perfection. This casserole offers a delightful balance of creamy and sweet flavors with a tender corn muffin base, ideal for a savory side or a light main dish.

Ingredients

Scale

Ingredients

  • 1 can whole kernel corn, drained
  • 1 can cream-style corn
  • 1 box corn muffin mix (8.5 oz)
  • 1 cup sour cream
  • ½ cup melted butter
  • 2 large eggs
  • 3 tbsp honey (divided)
  • ½ tsp salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking and prepare for baking.
  2. Mix Ingredients: In a large bowl, combine the corn muffin mix, whole kernel corn, cream-style corn, sour cream, melted butter, eggs, salt, and 2 tablespoons of honey. Stir thoroughly until the mixture is well blended.
  3. Bake the Casserole: Pour the prepared mixture into the greased baking dish. Bake in the preheated oven for 45 to 50 minutes, or until the casserole is golden brown on top and set in the center.
  4. Glaze with Honey: During the last 5 minutes of baking, drizzle the remaining 1 tablespoon of honey evenly over the top of the casserole to create a sweet glaze.
  5. Rest Before Serving: Remove the casserole from the oven and allow it to rest for 5 to 10 minutes. This helps it set further and makes it easier to serve.

Notes

  • Ensure the baking dish is well greased to prevent sticking.
  • The honey drizzle adds a sweet finish but can be adjusted to taste.
  • Letting the casserole rest helps it hold together when sliced.
  • Use fresh or frozen corn if canned is not available, adjusting moisture as needed.
  • For a richer flavor, consider using salted butter and reduce added salt accordingly.
